Sour cream coffee cake

Image
This is a recipe I got from my grandmother years ago that she used to make all the time. I make it every Christmas now.  I love it because you can decide how sweet you want it by altering the ingredients slightly the way you want it. Ingredients Cake 2 cups of sugar 1 cup of margarine or butter 2 large eggs 1 tsp vanilla 1 cup of sour cream 2 cups of flour 1/4 tsp baking powder 1tsp salt Topping 1/3 cup of brown sugar 3 Tbsp cinnamon 3 Tbsp chopped walnuts Caramel drizzle (ice cream topping works well - squeeze bottle is best) (any other ingredients you think might be nice here; Skor chunks, coconut, different nuts, whatever you like works) Preheat the oven to 350 degrees. Cream together the sugar and the margarine until they're all mixed. Mix in the eggs and fold in sour cream. Add vanilla. In another bowl mix all dry ingredients until well combined. Fold into the rest of the mixture. For the topping mix the crushed walnuts, brown sugar, and cin...

Bull$&!t cupcakes

Image
So these cupcakes are just regular cupcakes except you add baileys lol. I used panama jacks instead because it's cheaper but you can do whatever. Just buy two boxes of cake mix and make it as directed but put slightly less water and add some baileys instead. For the icing I made it home made with icing sugar but you can just add some baileys to regular icing. Here is a link to the recipe for the baileys icing and brownies if you want to make them: http://www.yummly.com/recipe/Bailey_s-Brownies-Recipezaar Top with some sprinkles once they're iced and they'll be delicious!

Mushroom soup pork and roasted vegetables

Sorry no pictures this time!!! I seasoned the pork two different ways; one I used greek seasoning and the other I used my favorite BBQ chicken. Chop up some onion slices to cook with the pork just to add flavour. Place the onion on top of the pork. Put one can of cream of mushroom soup in a bowl and combine with 1/4 can of water. Pour over the top of the pork and make sure to cover each piece on both sides. Bake in the oven for an hour at 350 degrees. For the vegetables mix some green beans, bell peppers, onion and garlic in a dish, adding a little bit of olive oil to keep the moisture. Sprinkle vegetables with lemon pepper, garlic salt, and celery salt, making sure to mix it together in order to coat everything evenly. Bake vegetables for 40-50 minutes at 350, stirring occasionally so those on top do not burn. You can eat just like this or cook some rice or pasta to pair with it. The vegetables were soooo good though!!!

Pierogies and Scrambled Eggs

Image
I absolutely LOVE pierogies, but I've always made them the same way; boil and then fry them. So this time, I decided to try something new, and pair them with some scrambled eggs for breakfast (or lunch). You will need: Ready-made pierogies (or home made, if you prefer)\ BBQ chicken seasoning Garlic salt Celery salt Two eggs (per person, I only made for me :P) 1/2 cup of shredded mozzarella cheese Butter or Pam for greasing the pan First, boil the pierogies until they are soft (cooked inside and no longer frozen). Grease a baking pan and place the pierogies on the pan. Sprinkle with chicken, celery and garlic seasoning on both sides and top with some mozzarella cheese. Broil for a few minutes, until the cheese is melted and pierogies have become slightly browned.  To make the eggs, crack them and put them in a small bowl, add a splash of milk, some BBQ seasoning, and the rest of the cheese, and mix until the eggs are all mixed together. Put in a frying pan stirring often to...

Shepards pie

Image
So this is basically just regular Shepards pie with a bit of enhanced flavour. You will need: 6 large potatoes 2 pounds of lean ground beef 2 cans of mixed, frozen or fresh veggies (peas, corn, carrots, etc) 3 large cloves of garlic, chopped finely BBQ seasoning Celery salt 1/4 cup of onion, finely chopped Caesar dressing (Renee's) Ranch Butter Milk Start by peeling the potatoes and cutting them in quarters for quick cooking. Boil them until soft. While the potatoes are boiling, cook the ground beef with the onion and garlic in a large skillet until browned. Add beef to large baking dish and mix with some Caesar dressing (be generous in coating the meat) and add the veggies and mix it together. Drain the water out of the pot of potatoes once they are cooked, add 1 table spoon of butter, 1/8 cup of ranch and a splash of milk and mash together. If they are not creamy enough, add some more ranch. Add mashed potatoes on top of the meat and veggies and smooth out....

BBQ chicken legs and roasted potatoes and peppers

Image
For the chicken I use my home made BBQ sauce with coke instead of beer and added onions to it. Just thaw out the chicken, coat in BBQ sauce and bake in the oven. For the potatoes you'll need: five potatoes, half of a green pepper, 1/4 of red and orange pepper and some onion. Chop all of it up into bite sized pieces, sprinkle with BBQ chicken seasoning, celery salt, lemon pepper and add chopped garlic. Bake the potatoes until soft. So yummy!!!

Pork Tenderloin and Tangy Scalloped Potatoes

Image
So I have to start with the pork with this one, because I used some of the sauce from it in the potatoes. To make the pork tenderloin you will need: 2 pork tenderloins one can of cream of mushroom soup three small crushed garlic cloves lemon zest 1/4 cup of water small amount of caesar dressing bbq chicken seasoning Small amount of chopped onion and green pepper Cut the pork into small pieces and lay on a baking tray. Sprinkle pork with bbq chicken seasoning. Mix together the rest of the ingredients in a bowl and pour over pork, making sure to flip the piece around to coat them. Bake for 50 minutes at 400 degrees or until cooked. It's a good idea to stir it every once in a while to make sure the pork gets coated all around. Because this recipe made a lot more sauce than I needed, I took about 1/4 of a cup of it and put it in a bowl to mix with the potato sauce. For the potatoes you will need: 6 medium sized potatoes, sliced the rest of the sauce from the pork 2 tblsp mayonna...

Stir fry with creamy twice bake potatoes

Image
For the stir fry you need white and purple onion, peppers (any kinds you like), and hot Italian sausage. For the sauce in the stir fry you will need French dressing, honey garlic sauce, ketchup, mustard, garlic and brown sugar (franks res hot as well of you want it spicy). Mix equal parts of honey garlic and French dressing, add a little bit off all of the other ingredients (to taste) and pour into a glass baking dish. Chop up all veggies and meat and add to sauce. Make sure to stir well to make sure everything is coated evenly. Bake in the oven at 350 for around an hour. For the potatoes, instead of baking them the first time I boiled them but it really doesn't matter. You will need potatoes, cream cheese, mozzarella and cheddar cheese, sour cream, and diced white onion. Boil the potatoes without the skin until cooked. Put potatoes in a baking dish an add 3/4 of a pound of cream cheese, about a cup of mozzarella cheese, a small tub of sour cream, and as much white onion as...

Crispy cream cheese stuffed chicken

Image
For the stuffing you'll need cream cheese (flavoured if you want), salsa, shredded marble cheese and garlic. Mix all of these together in a dish. Next, thaw some chicken breast and cut each one do that there is a pocket in them. Take some garlic croutons and crush them very finely and coat the chicken breasts in the crumbs. Stuff the chicken with the cream cheese mixture and bake in the oven at 350 degrees for 40 minutes. I paired it with some liptons noodles and a Caesar salad. Yum yum!!!

Quirky quesadillas

Image
This is one of those things I make quite often but this is the first time I've made different kinds They're all made the same way with differences in flavoring. Basically you take a chicken breast and cut it up into small pieces. Put it in a frying pan and cook it. Cut a pita so that you have a top and bottom and put the chicken in between. Cover with cheese and broil in the oven until crispy and cheese is melted. The differences come when you're cooking the chicken and the sauce you put on the pita. For the first one I make most often I put BBQ sauce on the chicken with garlic salt and celery salt. Put ranch on one side of the pita and BBQ sauce on the other side and drizzle a little of both into the chicken inside the pita. Top with cheese and bake. The second one I used honey garlic sauce and honey mustard. The next one I just used seasoning and put lots of veggies in it and added a little ranch on the pita. The last one I uses Italian dressing and honey mu...

Vegetables and rice

Image
Make the vegetables the same way as was done with the fish meal. Make some instant rice and add soy sauce for flavoring. Serve them together for a healthy lunch or dinner meal!

Chip-battered fish with home made chips and veggies

Image
The fish is the easiest to make. Just take some small pieces of cod, haddock, or something along those lines and thaw them out. Melt some butter and add in some lemon juice (you can use beaten eggs if you'd prefer). Then in another bowl mix crushed chips of your choice, bread crumbs, spices, dill weed, and lemon pepper. Coat the fish with the butter mixture then the bread crumb mixture and put in a greased baking sheet. Bake on 400 degrees for 20 minutes or until crispy. To make the potato chips, slice around four or five medium sized potatoes into thin slices. Make sure they're all the same size so that they're done at the same time. Grease a baking sheet or two and then place the patted-dry potatoes into the sheet. Brush lightly with butter and add salt or any other spices you like. Bake in the oven at 400 for 20 minutes or until crispy. For the vegetables, chip one clove if garlic finely, cut up onions, green and red peppers, green beans, and any other vegetables ...

BBQ pork chops and crispy potatoes

Image
So for the BBQ sauce I made my regular sauce with beer and ketchup base but I added two small garlic cloves and some red onion as well as the BBQ chicken, greek and lemon pepper spices. Again, you can bake it BBQ the meat but marinate for the best flavor. The potatoes were easy but took some prep time. I peeled and slices them and laid them out on a long sheet of tin foil. I chopped up red and white onion, red and green peepers, 1/4 of a medium apple, and green string beans (not chopped). Put lots of BBQ spice on it with celery salt, some lemon juice, Thai spice, and lots of bread crumbs if you want them crispy. I also added a small chopped garlic clove. Close up the tin foil and bake until potatoes are soft.

Groceries

So as some of you know I'm a student and I live at home which I why I always make my own sauces; I don't do the grocery shopping. Well, since I don't pay rent and basically live with my bf and his parents we made a deal that I would cook and do most of the grocery shopping so I'm really excited. We had our first shopping trip today and i got some REAL garlic and some new spices, including BBQ chicken, greek and Thai. Just a heads up that from now on when I refer to garlic I mean real galic, not garlic in a jar!!!!

Spicy scalloped potatoes and tequila chicken

Image
So this one is pretty good although I'm not exactly positive what i put in it and the potatoes were a little spicy for me. For the chicken I mixed in a bowl (about enough to coat them) tequila as a base, a little bit of BBQ to thicken it up Dijon mustard, celery salt, lots of italian seasoning, and whatever other spices you like. Ideally you would marinate the chicken for a few hours but I didn't have time so I just coated it and cooked it. For the potato sauce I actually used the garlic dip you get with your pizza as a base lol and then I added caesar with bacon, mustard, spicy salsa, dil sauce, honey mustard, garlic, lemon pepper, white onion, chili pepper flakes and franks red hot sauce. Coat the potatoes in the sauce (you'll want quite a bit or they'll get dry) and add lots and lots of cheddar or marble cheese. Bake both the chicken and the potatoes until cooked and thats it!

Ribs and potatoes

Image
Hey everyone! So for the ribs I used the same sauce as for the chicken from before but I added some Dijon mustard and more spices (thyme, etc.) and onions. Again, you should marinate for best flavor. For the potatoes I mixed even parts of a buttermilk dill sauce and smoky applewood BBQ sauce, added some Dijon mustard, potato seasoning, garlic and celery salt, and lemon pepper. Only make enough sauce to coat the potatoes lightly because you just want it for a little flavor, they're cut thin so marination is not the goal. I cut up some red and green peppers and onions and mixed the chopped potatoes, sauce and veggies all together. I let them sit too but it's probably not necessary. BBQ or bake the ribs and fry the potatoes so that they're crispy. You could bake them also if it's easier.

Heavenly Hashbrowns

Image
For this delicious recipe you will need hash browns, cheese, a BBQ sauce of your choice, ranch dressing, onions, garlic salt, pepper and celery salt. To start off, finely chop onions and grate cheese. Using butter or oil, fry the hash browns with onions until they are golden brown, seasoning generously. Add BBQ sauce and ranch (only enough to coat hash browns), add the cheese on top, and once the cheese has melted, serve it. I found it a little dry so I drizzled some more BBQ and ranch on top. Add some toast with butter for a delicious lunch!

Vegetables and Rice

Image
I'm so excited about this one!!! I really had no idea what I was doing when I started and I made the sauce myself, using stuff I already had, so it took a while to find something that worked. You will need: Sausage (optional) Peppers Onions Tomato Mushrooms Rice and for the sauce Honey garlic sauce French dressing Garlic Ground mustard (a pinch) Celery salt Lemon pepper Italian seasoning Potato seasoning Dill weed When I started, the sausage was already cooked, but I'm sure you could do it without cooking it first and instead cook it with everything else. Spicy Italian sausage would be good but I just used regular sausage. Start by cutting up all the vegetables into strips just like you would for a stir fry and putting them into a baking pan. After each layer, I added some spices on top as well - you can choose whichever ones you want. Add the sausage as well. To make the sauce, mix about half and half of the honey garlic and french dressing - that will b...

Cupcakes!!!

Image
There is no recipe for these - they're from a box with regular icing from a tin but I wanted to post them to show the design. I made them for my boyfriend's 20th birthday - they're supposed to look like boobies!!!! I didn't have a decorating kit so I had to improvise which is why I used candy and also why it's not perfect.  Here they are!

Chicken and Cheesy Scalloped Potatoes

Image
Hi all, So this is my first post, and although I'm going to try my hardest to post pictures for all of my dishes, I don't have pictures for this one (next time I make it I will post pictures). I prepared chicken breast with home made barbeque sauce (a recipe I learned when I was young, tweaked a little) and specialty potatoes, a recipe I created on my own! We will start with the chicken. I always like to marinate the things I cook so that it can absorb the flavour, but that's completely up to the chef. To make the barbeque sauce you will need: Ketchup Beer, Pepsi, or Coke (I like to use beer) Brown sugar Hickory (or HP sauce if you don't have hickory) Garlic salt Celery salt and any other spices that you enjoy (again, it's up to what you like, these are the main ingredients). Begin with the ketchup, and put about half as much ketchup in as you would like total for sauce. Then add the beer until the consistency seems right. Add some brown sugar until it tast...

Welcome to my cooking blog!

Hello everyone! I've decided to create this blog because I really love cooking however I don't usually follow recipes or use cookbooks when I cook. I really enjoy making up new dishes and trying things out so I thought it would be interesting to share my creations with the world, especially since cooking is not my career and so it's only family and friends that get to see and taste it! I would love for people to try out my recipes and let me know how they liked them, and even to give feedback on the dishes. I am also open to suggestions of things to make as I LOVE trying new things! I hope you guys enjoy!
