Chicken and Cheesy Scalloped Potatoes
Hi all,
So this is my first post, and although I'm going to try my hardest to post pictures for all of my dishes, I don't have pictures for this one (next time I make it I will post pictures).
I prepared chicken breast with home made barbeque sauce (a recipe I learned when I was young, tweaked a little) and specialty potatoes, a recipe I created on my own!
We will start with the chicken. I always like to marinate the things I cook so that it can absorb the flavour, but that's completely up to the chef.
To make the barbeque sauce you will need:
Begin with the ketchup, and put about half as much ketchup in as you would like total for sauce. Then add the beer until the consistency seems right. Add some brown sugar until it tastes the way you want it. Put in just a small amount of hickory and then add your spices to taste.
That's it! The sauce is really easy to make but it's better than any sauce you can buy (I think). I like to marinate the chicken in it but otherwise you can just coat it before putting it in the over for 45 minutes on 350 degrees or barbequing it.
The potatoes are actually really simple too. For these you will need:
Mix the barbeque sauce, garlic, and spices together in a dish.
Slice the potatoes like you would if you were making scalloped potatoes. Spread them out in a baking dish (single layer) and drizzle some ranch and the barbeque sauce mix on top. Don't put too much - just drizzle it enough so that all of them have some of each on it. Then top it with shredded cheese (the more, the better!).
Do this until you've run out of potatoes, creating multiple layers of potato.
Now put them in the oven (I cooked them with the chicken - they took the same amount of time) and cook them for around 40 minutes. Be sure to check on them, however, as you don't want the cheese to burn.
Add a vegetable and you have a delicious meal!!!

To make the barbeque sauce you will need:
- Ketchup
- Beer, Pepsi, or Coke (I like to use beer)
- Brown sugar
- Hickory (or HP sauce if you don't have hickory)
- Garlic salt
- Celery salt
Begin with the ketchup, and put about half as much ketchup in as you would like total for sauce. Then add the beer until the consistency seems right. Add some brown sugar until it tastes the way you want it. Put in just a small amount of hickory and then add your spices to taste.

The potatoes are actually really simple too. For these you will need:
- Potatoes (however many you need)
- Barbeque sauce (I used the same stuff as on the chicken)
- Ranch dressing
- Garlic
- Spices (anything you like, I used celery salt, Italian seasoning, potato spice and lemon pepper)
- Cheddar or marble cheese
Mix the barbeque sauce, garlic, and spices together in a dish.
