Vegetables and Rice

I'm so excited about this one!!!
I really had no idea what I was doing when I started and I made the sauce myself, using stuff I already had, so it took a while to find something that worked.
You will need:
  • Sausage (optional)
  • Peppers
  • Onions
  • Tomato
  • Mushrooms
  • Rice
and for the sauce
  • Honey garlic sauce
  • French dressing
  • Garlic
  • Ground mustard (a pinch)
  • Celery salt
  • Lemon pepper
  • Italian seasoning
  • Potato seasoning
  • Dill weed
When I started, the sausage was already cooked, but I'm sure you could do it without cooking it first and instead cook it with everything else. Spicy Italian sausage would be good but I just used regular sausage.

Start by cutting up all the vegetables into strips just like you would for a stir fry and putting them into a baking pan. After each layer, I added some spices on top as well - you can choose whichever ones you want. Add the sausage as well.

To make the sauce, mix about half and half of the honey garlic and french dressing - that will be the base. Add all of the spices, and you can even add a splash of ranch if the taste isn't quite right. Now, it may not taste fantastic right now (I found the honey garlic a little overpowering) but once it's cooked with all of the vegetables it'll taste much better. You want to have enough to make a small pool in the bottom of your dish, but the vegetables will add to the juices so don't worry if it doesn't look like you'll have enough for your rice.

Add the sauce to the vegetables and meat and stir it all up. Marinate it for about 2 hours to really get all the flavour into everything, and make sure you stir it every once in a while.

Now you want to heat the oven to around 350 degrees and put the mixture in the oven.
I cooked it for about 45 minutes but the vegetables were still a little crunchy so a little longer might be better - just make sure the veggies are soft. Again, make sure you stir it once or twice so the flavour is even.

Now cook your rice, top the rice with the mixture and you have a beautiful meal!!!
