Pork Tenderloin and Tangy Scalloped Potatoes

So I have to start with the pork with this one, because I used some of the sauce from it in the potatoes.

To make the pork tenderloin you will need:
  • 2 pork tenderloins
  • one can of cream of mushroom soup
  • three small crushed garlic cloves
  • lemon zest
  • 1/4 cup of water
  • small amount of caesar dressing
  • bbq chicken seasoning
  • Small amount of chopped onion and green pepper
Cut the pork into small pieces and lay on a baking tray. Sprinkle pork with bbq chicken seasoning. Mix together the rest of the ingredients in a bowl and pour over pork, making sure to flip the piece around to coat them. Bake for 50 minutes at 400 degrees or until cooked. It's a good idea to stir it every once in a while to make sure the pork gets coated all around.

Because this recipe made a lot more sauce than I needed, I took about 1/4 of a cup of it and put it in a bowl to mix with the potato sauce.
For the potatoes you will need:
  • 6 medium sized potatoes, sliced
  • the rest of the sauce from the pork
  • 2 tblsp mayonnaise
  • honey mustard
  • bacon caesar dressing
  • a little bit of ranch dressing
  • potato seasoning
  • italian seasoning
  • 1-2 cups of grated mozzarella cheese
Mix in a bowl the pork sauce, mayo, equal parts of money mustard and caesar (about 1/2 cup), ranch, and 2 tsp of Italian seasoning. 
Slice the potatoes small enough so that they will cook in about an hour, and in a baking dish, place one layer (enough to cover the bottom of the dish) of potatoes. Sprinkle with potato seasoning, cover with cheese and sauce, and repeat until all of your potatoes are gone.
Bake for about 70 minutes at 400 degrees or until cooked through.

Pair with corn or other veggie and eat up!!!
