Veggie and Goat Cheese Panini

This is SSSSSSSSSOOOOOOOOOOOOOOOOOOOO good and really easy to make! You can use a panini maker or a George Foreman type grill. I used the latter.

You only need a few things too.

First, make some pesto mayo by mixing some garlic salt, mayo, basil, and lots of Parmesan cheese. I also microwaved a clove of garlic for about 20 seconds or until it was soft and chopped it and put it into the mayo mixture.

You can really use any type of bread, but I used a pita and it came out nice a crispy - use a thicker bread if you don't want it so crispy.

Chop up some veggies - tomato, cucumber, peppers, onions - whatever you like.
Put some of the pesto mayo on one half of the panini, and place the veggies on top, making sure to spread everything out evenly.

Take some goat cheese (or brie, feta, whatever you like) and crumble it on top. Maybe a piece the size of a toonie.

Fold the bread in half and place it on the grill, with the open side facing up so nothing falls out. Close the grill and press down on it. Leave it for 5-10 minutes or until it is nice and crispy.




This is delicious. I could eat it every day.
