Quesadillas and roasted potatoes
I made this really quick for lunch today. For a change, instead of using sour cream and salsa, I used ranch dressing and BBQ sauce.
For the quesadilla you'll need:
One quesadilla/wrap, cut in half
1/2 of a leftover pork chop or any meat you'd like, chopped
About a tablespoon of chopped red pepper
Any other vegetables you'd like
1/4 cup of cheese
Place all of your ingredients on one half of the wrap and put the other half on top.
Bake at high heat or broil until cheese is melted and tortilla is golden brown.
For the potatoes, I used the same method as I did with my baked potato, only I used leftover roasted potatoes.
