Crispy chicken breast with twice baked potatoes and sweet carrots

This was a delicious meal that is fairly simple to make. The potatoes take some time but are not difficult at all to make. For the chicken you need: 4 boneless skinless chicken breasts 1 cup of mayonnaise or miracle whip 1/2 cup of Parmesan cheese 1 teaspoon of basil 1 teaspoon of garlic salt Mix all of the ingredients together (minus the chicken) in a bowl until everything is combined. Coat the chicken in the mixture (don't make it too thick) and bake in the oven for 40 minutes at 375 degrees. If the chicken doesn't crisp up, just put the oven on broil for a few minutes. Carrot curl salad

So I saw this recipe on Chatelaine and changed it a little. Starts by peeling 2-4 large-medium sized carrots and rinsing them off. In order to get the carrots curly you have to basically just keep peeling. Do it in long strokes as it make it look prettier and will be easier to eat. To make the sauce, take about 1/2 cup of Italian dressing and a few tablespoons of honey (to taste) and whisk them together. Deep fried pickles with wet batter

Sorry guys but no pictures on this one. This is better if you have a deep fryer: otherwise, you might want to use the other method I have on the blog here. I found that sometimes with the egg and bread crumbs that it didn't stick as well, so I decided to try a wet batter. If you want to try it the other way, you just put egg in one dish and whisk it, and Italian bread crumbs in the other. Coat the pickles in the egg and then the bread crumbs and then fry. The problem with this wet batter is that it doesn't stay all in one piece. I also found that you have to leave them on longer. I under fried them a little and the batter came out a bit chewy. To make the batter, crack one egg into a large bowl. Add some flour until its kind of lumpy and then add a little water until to have a consistency that is reasonable. Seared steak with garlic sauce

I made this the other day because I was watching the Food Network and they were talking about searing meat so I thought it would be a good idea. Keep in mind that if you like your steak cooked more than medium rare and your steak is fairly cooked, you will have to throw it in the oven for a whole after searing. It still works as a great tool for keeping the juices in though. As you may have seen I have made garlic cream sauce for chicken before and even used a (slightly altered) version for pasta sauce. Well, I thought it might also be nice with some mushrooms and onions on top of a seared steak. Make the cream sauce as your normally would, except when you are cooking the garlic at the beginning, also cook your mushrooms and onions. I forgot my mushrooms and so cooked them separately and added them after. To sear the steak, season one side with some steak spice, garlic salt, and tex mex seasoning. Fancy Mr. Noodles with Perfect Garlic Bread

So if you're a student or if you're just having money troubles, you can take cheap food and make it fancier! I made this for lunch but you could make a few packages of Mr. Noodles and have it for a light dinner. Prepare the noodles as you would according to the directions on the package. While the noodles are boiling, add a little bit of garlic salt, thyme, and basil. Don't add too much, or it will be too strong. Less than a teaspoon of each is good. Take one large garlic clove and squash it so that it opens but wont fall apart. Add it to the water and boil it with the noodles. Once the noodles are done, take some tongs and place it in a bowl. Pour a small amount of juice in the bowl as well. Add salt and pepper to taste. You can actually add some cheese (Parmesan probably) to add to the taste. Veggie and Goat Cheese Panini

This is SSSSSSSSSOOOOOOOOOOOOOOOOOOOO good and really easy to make! You can use a panini maker or a George Foreman type grill. I used the latter. You only need a few things too. First, make some pesto mayo by mixing some garlic salt, mayo, basil, and lots of Parmesan cheese. I also microwaved a clove of garlic for about 20 seconds or until it was soft and chopped it and put it into the mayo mixture. You can really use any type of bread, but I used a pita and it came out nice a crispy - use a thicker bread if you don't want it so crispy. Chop up some veggies - tomato, cucumber, peppers, onions - whatever you like. Put some of the pesto mayo on one half of the panini, and place the veggies on top, making sure to spread everything out evenly. Take some goat cheese (or brie, feta, whatever you like) and crumble it on top. Maybe a piece the size of a toonie. Fold the bread in half and place it on the grill, with the open side facing up so nothing falls out. Close the grill ...

Garlic tomato cracker appetizer

So I made these for a side dish but you could make them as an appetizer. I only had mini crackers so I had to use cherry tomatoes but I would suggest using large vegetable or garlic crackers with full sized tomato slices. Start by putting a garlic bulb in the over. Make sure to cut off the top first. Put it in the oven at 350 for 20 minute or so. Alternatively, which might be easier, you can chop up the garlic and then microwave it in the butter. Lay out your crackers on a baking dish and melt some butter. Drizzle the butter on top of the crackers. Take some pieces of the garlic if you is the whole bulb and lay it out in a thin layer over each cracker. Slice some tomato and put one slice on each cracker. Sprinkle with a little bit of garlic salt and either parmesan or grated mozzarella or goat cheese. Broil the crackers until they begin to darken and the cheese is either melted or darkening.

Sweet cherry tomato and white wine pasta

This pasta sauce is really easy to make and you can make a small amount with just the cherry tomatoes or add a few regular sized ones to make a meal or side dish for the family. For a side dish amount for four, you'll need: 1/2 pack of cherry tomatoes 1 large regular tomato 4 garlic cloves, chopped 1 onion, diced 1 red pepper, chopped (optional) 2 tablespoons of garlic powder 2 tablespoons of Greek seasoning Sautée the onions and garlic until soft and then add the diced tomatoes and the red pepper. Let that simmer for a while until all the juices are out and then add the seasoning. Cook pasta until al dente and add to the sauce.

Crock pot steak and Asian egg noodles

Doing steak in the crock pot is really easy AND delicious! All I did was make my normal BBQ sauce for the steak and added some Thai seasoning for spice. Just place the frozen steak in the crock pot with the seasoning and sauce and cook for about four hours on high. Make sure you check it when it's approaching the fourth hour, as you don't want to overcook it. These steaks are fairly thick so you may have to adjust timing for your own. For the noodles, use 5 chunks of egg noodles, some bell peppers, onion, and garlic. Cook the noodles in a pot with water, while sautéing the veggies in a deep pan. Add to the pan some soy sauce and brown sugar to taste. Once the noodles are cooked, strain them and add them to the veggies. You can either cut up the steak and put it in with the pasta or eat it separately.

Spice up your sandwich love-life

Pesto mayo is the new big thing at restaurants; they put it on paninis and other things, and it is delicious!!! Apparently, it is really simple to make! So far I have only made it with whipped dressing, but it would be better with real mayo I think. Making a large batch of this mayo is a fantastic way to make your daily lunches at work or school a little more exciting and delicious. All you need is 1/4 cup of mayo, 1 tablespoon of basil, 2 tablespoons of parmesan cheese, and a dash of garlic salt. Just mix it all together and put it on whatever you want. I find the parmesan cheese a little overbearing so you can tone it down a little too.

BBQ sauce bottling

As I mentioned in my last post, if you prefer homemade BBQ sauce it would be wise to make a large amount. The problem is where to keep it. Well, I have a solution. Make the BBQ sauce and then get an empty Kraft salad dressing bottle and clean it out and rip all of the labels off. Get a funnel and pour the sauce into it. Just put a label on it so everyone knows what it is.
