Stuffed mexican burgers with crispy potato wedges
This is something my grandmother made once and I sort of observed what she did and tried to duplicate it.
For the burgers, thaw one pound of lean ground beef (makes four burgers). Take some of the old el paso taco seasoning and mix it with the ground beef, one lightly beaten egg, bread crumbs (or crushed garlic croutons) and any other spices you like. I had to add some flour as mine was runny. I also fried some onions and added them for flavour but of course this is optional.
For the stuffing I just use regular cream cheese but any of the flavored cream cheese would work too, and you can add whatever you want to it.
Take 1/8 of the ground beef mixture and make a disk with it, placing a small amount of cream cheese on top. Add another 1/8 of the beef to the top and seal around the sides, pushing the meat together tightly. Do this for all four and shape as desired.
BBQ until fully cooked.
For the potato wedges I used a similar recipe as the garlic potatoes, but my mom had no garlic so I did it sans garlic. Just cut the potatoes, add spices, and cover with olive oil. Microwave for 6 minutes stirring half way through. Crush some more croutons and toss potatoes in them until fully coated. Bake at 425 for about 30-40 minutes or until golden brown. Make sure to flip them part way though.
Top your burger with salsa, sour cream, cheese sauce - whatever you want. You can use a bun or not - the thin ones work nice but if you have thick burgers it may be easier to eat without one.
