Mamas chicken and rice

This recipe is very similar to something my mom has made forever - although neither of us actually has a recipe for it.

You can use whatever type of rice you like, you can even put it on top of mashed potatoes if you prefer.

Cut up two chicken breasts into bite sized pieces and place them in a large, deep pan.
Cut up half of a red, green and orange pepper, one small white onion, and whatever other vegetables you like and add to the pan.

Add some BBQ sauce - my home made sauce is really good on this and so is Diana's or Heinz chicken and rib sauce. You can play with the flavours as well - of you prefer something lighter you can use Greek dressing orn Italian dressing.

Add some spices, such as garlic, celery salt, lemon pepper, and whatever else you like, and add a little water so that you have a nice thin sauce for on top of the rice.

Cook your rice and place the chicken and veggies on top of it with some extra sauce and VOILÁ!
