Drumsticks and creamy mashed potatoes with a vegetable medley
This was super yummy, except I found the veggies a little too strongly flavored, so another sauce might be better or just less of it.
For the veggies you'll need:
I medium tomato
1 small red bell pepper
1/2 large orange bell pepper
1 medium onion
3-6 radishes
1 cup of chopped green beans
1/3 of a cucumber
1/2 cup of Italian dressing
3 tablespoons of garlic salt
3 tablespoons of Greek seasoning
1/4 cup of shredded mozzarella or feta cheese
Chop up all of the veggies into bite sized pieces and place in a large bakin dish. Make sure that everything is spread out and not piled up too much.
Sprinkle with the seasonings and then pour the dressing evenly overtop. Adding some catalina or something else that is sweet may help with the flavour.
Bake at 425 for 30-40 minutes or until the veggies start to brown. Remove from the oven and sprinkle the shredded cheese over top. This would also be really good raw as a sort of veggie salad.
For the chicken, you just need about 15 chicken drumsticks and my homemade BBQ sauce (if you like it, I suggest making a large amount so you don't have to do it every time). I like ti put the chicken and the sauce in a freezer bag and shake it up to make sure they all get coated with sauce. You can find the recipe in previous entries.
BBQ the chicken until it begins to crisp up.
For the mashed potatoes you need:
6-8 white potatoes, quartered
1/2 cup of mozzarella cheese, chopped
2 teaspoons of garlic powder
1/2 cup or so of ranch dressing
1/4 cup of dill sauce
Bring a large pot of water to a boil and put potatoes into it. Boil potatoes until the are soft all the way through.
Drain the potatoes and add the remaining ingredients, putting the pot back on the stove on medium-low to melt the cheese. Use a potato masher to mash the potatoes and mix everything together well.
