Chicken and Cheese tortellini with Rose sauce

I made this the other day and it's delicious. This makes about 5-6 servings

Ingredients:

  • 3 boneless skinless chicken breasts
  • 3 cups of cheese or meat tortellini (or a combination) 
  • 1 large red pepper, sliced
  • 2 cups of shredded cheddar (or cheese of your choice - Parmesan would be good)
  • 4 TB butter or margerine
  • Salt and pepper to taste
  • 1TB flour
  • 2-3 cups of cream (light or half-and-half is sufficient)
  • 1/2-1 cup of red tomato sauce of your choice (I used a basil mix)
1. Boil some water and add in your tortellini to start cooking - it can take a while. 

2. Cut the chicken into small bite-sized pieces and season with salt and pepper. Melt half of your butter in a large pan and wait for it to heat up. Once it's heated, add the chicken and cook until it's cooked through and browned nicely on the outside.

3. Add the rest of the butter and let it melt, then add the flour and mix thoroughly. 

4. Add in your cream and cook for 3-5 minutes, until it thickens and begins to look like sauce. 

5. Add your red peppers and your red sauce and cook on medium-low for another few minutes, until the peppers have cooked a bit and the sauce is integrated. 

6. Add your cheese and just melt it, before immediately doing the next step.

7. Once the tortellini is cooked, strain it and add it to your sauce and chicken mixture.

8. Mix well and top with more cheese if you want. Serve with garlic bread for extra yumminess.
