Light, fruity birthday cake.
I made this cake for my daddy's birthday, and he's not big on sweets, so I decided to make it a fruit cake.
I'm not going to go through all of the ingredients because it's all pretty straight forward - I'll add links and info where it's needed.
You'll need:
Ingredients to make 2 vanilla cakes
2 pints of strawberries (and other fruit if needed)
4 chocolate pudding cups (or 2-3 cups of pudding)
2 packs of dream whip mix and the ingredients to make it
1/2 cup of cream cheese
3-5 tbsp icing sugar
This is a layer cake, so if you have two pans you can make the cakes seperately, or you can make one and cut it in half later. I cut mine in half.
You can also use and shaped pan you want - you'll just have to vary the baking times.
Begin by making your two vanilla cakes. Here's the site that I used for the recipe. Just watch how long you leave it in - mine was done way before 1 hour even with the recipe doubled.
Either double this recipe or make two of these.
While the cake is in the oven you can make the frosting. I wanted an icing that wasn't too sweet but I didn't want the whipped cream to melt.
Make the dream whip as instructed (both packs) and then add in the cream cheese and icing sugar. You can play with the amounts until it tastes the way you want it to.
I actually began by mixing melted marshmallow into my whipped cream, but I don't recommend this. It had a weird taste and an unpleasant texture.
Regrigerate the icing until it's needed
Take cakes out and let cool.
Once it's cool cut your single cake in half horizontally. Take one half and place it on your tray.
Take one pint of strawberries and slice them fairly thin - these will go in between the two layers.
Take your pudding and spread it all over the top of the first cake. Layer the strawberries on top.
Do this all the way across (mine is only half done in the picture) and then put the other cake (flattest side down) on top.
Now you can take your icing out of the fridge and cover your cake with it.
Take the other pint of strawberries and cut them in half length wise. Place them cut side down on top.
This recipe is also really good with chocolate cake and raspberries.
